Midtown Juice Lab, 1426 N. 3rd St. Harrisburg, May 31. Pass. Scoop being stored in the ice machine with handle lying on ice cubes. Manager/Owner corrected this non-conformance by placing scoop into 3-bay sinks for cleaning. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Observed old food residue and debris on the bottom shelf of the 2-door refrigerator where carrots are stored. Also, observed old berry residue on the bottom of the upright freezer and on the floor directly in front of unit.

The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Observed container of moldy clarified butter in True refrigeration unit below crepe making area. Corrected on site. Observed multiple cartons of raw eggs stored in direct contact with ready to eat foods in the back two door cooling unit. Corrected on site. Observed wooden scraper used to make crepes stored in a container of water which is not maintained at 135°F or above as required. Educated and corrected on site. Observed wiping cloths being used to soak up water from leak in True refrigerator under crepe making area and coming in contact with food with potential for contamination. Refrigerated ready to eat, time/temperature control for safety food (chicken) prepared in the food facility and held for more than 24 hours, located in the bain-marie refrigeration unit, is not being date marked. Observed tongs, a food contact surface, stored dirty hung from metal shelf above three bay sink in the back storage/prep area. Corrected on site. Observed the following on non-food contact surfaces: Floors in the back prep/storage room have accumulation of food debris/staining and are not being cleaned at a frequency; Wall storing magnetic knife holder above prep table in back prep/storage room has accumulation of dirt/old food residue and is in need of cleaning. Old unused equipment stored in the back storage area (large broken ice machine), should be removed from food facility.

Observed the following on food contact surfaces: Magnetic knife holder storing dirty knives next to bain-marie unit in cooking area with accumulation of food residue/static dust and was not clean to sight and touch, corrected on site; Meat slicer next to bain-marie unit in cooking area with accumulation of old food debris and is not being cleaned at a frequency, corrected on site; Ice machine in back room next to entrance to cooking area with accumulation of slimy, pink residue; Ice machine was emptied and cleaned during this inspection, corrected on site.

Applebees #9001, 1181 Mae St. Hummelstown, May 29. Pass. Observed an accumulation of ice build-up at the exterior of the freezer door due to deteriorated gaskets and a bent/mangled door and frame. Observed ice accumulation along the upper interior ceiling joint and lower floor joint in the beer and food cooler. This cooler is directly beside the freezer, and is evident that the seals between both cooling units are deteriorated and in need of repair/replacement. Observed silver tape holding a top sliding door together on the two door beverage glass cooler behind the bar area. Tape is not a cleanable surface and unit must be repaired or replaced. Observed static dust on the numerous amounts of wiring over the expo area of the kitchen with the possibility to contaminate food and equipment below. Observed a black mold-like substance on the entire wall and brackets at the clean end of the mechanical dish machine area, with the possibility of steam dripping from the machine could contaminate clean equipment below. Observed clean food equipment and/or utensils on shelving at the three bay dish area, stored wet in a manner that does not allow for draining and/or air drying (wet nesting). Observed missing/broken floor tiles (2) at the cook line and one to the exterior left of the walk-in cooler and in need of replacement/repair. Also observed that there was water puddling in one of the missing tiles on the cook line indicating water under the floor tiles in this area.

C&J Catering at Pa Agriculture, 2301 Cameron St. Harrisburg, May 29. Pass. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. 2-door refrigerator in the common area has old food residue on bottom shelf. This items needs to be added to the weekly master cleaning schedule. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Microwave in the common use area was soiled. Building custodian is responsible for daily cleaning tasks.

The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Observed three white buckets of cut vegetables in the Traulsen two door baine marie area stored open with no covering. A small knife located in wall hanging knife holder, has a broken tip and is not in good repair or condition. Observed a stainless cylinder with a slimy liquid in the bottom of the cylinder where spoons and chop sticks were stored, coming in contact with the slimy water. Observed numerous knives, sharpener, slicer stored in/on the wall hanging holder, with dried food debris on all items stored. A wooden cutting board leaning against a dirty wall (at hanging knife holder area), contaminating knife stored. Wall where hanging knife holder is installed, with accumulation of dried food debris and in need of cleaning. Observed clean food equipment and/or utensils in stored in a stainless cylinder under the wall hanging knife area, stored wet in a manner that does not allow for draining and/or air drying (wet nesting).

K-Pot Hot Pot & Korean BBQ, 2810 Paxton St. Harrisburg, Complaint, May 29. Fail. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Observed wet wiping cloths in kitchen area, not being stored in sanitizer solution. The wash solution temperature in the mechanical warewash equipment sanitizing with chemicals was 95°F, rather than not less then 120°F, as required. It was agreed with person in charge to use the three Bay Sink while the issue with the dishwasher is solved. The handwash sink located in the restroom of the kitchen area does not have water at a temperature of at least 100°F. It was agreed with the person in charge to repair the hot water no later than Thursday or Friday of this week. While the employees were going to use the restroom located in the dining area. Plumbing system not maintained in good repair - observed faucet leaking at the in the dishwashing machine area. No sign or poster posted at the handwash sink in the bar area to remind food employees to wash their hands.
